Method: 

Using a tall glass, add the mint, lime, sugar and gomme, and muddle well until the ingredients look like cooked spinach! Stand a bar or soda spoon in the glass and half fill the glass with crushed ice. Add the rum, then drag the spoon up through the ice and use it to mix well, making sure the sugar is dissolved.
Add a little more ice and then top with soda water. Garnish with a sprig of mint

Ingredients: 

35ml Havana Especiale rum
10-12 fresh mint leaves
Half a fresh lime, cut in to 4 chunks
2 tsp caster sugar
1 tsp gomme (sugar syrup)
Soda water
